Valentine breakfast #2


Hi!

It's almost Valentines day and to be honest I don't really care about Valentine, but I do love food. So my second Valentine breakfast is a fact! This year Valentines day is on a Sunday, and everyone knows Sunday is pancake day right?! So I made this cute little breakfast of heartshaped pancakes with an apple/blueberry crumble on top.

Like a healthy and super yummy cheat!

For the pancakes (for two):

- 2 whole eggs

- 4 egg-whites

- 150 gr vanilla flavored instant oats (you can also use regular oats and blend them until they are fine as flour)

- tsp baking powder

- serving of Whey protein cinnamon danish flavor/ or if you don't use protein powder add cinamon

- 100 ml skimmed milk

- 100-150 ml water

(for the pink ones I used a little bit of pigment just for show)

Bake as regular pancakes and stick hearts out before you put them on the plates.

For the crumble:

- 1 1/2 apple

- 150 gr frozen blueberries

- 50 gr coconut flour

- 50 gr vanilla instant oats

- dash of cinnamon

- tbsp coconut oil

Pre-heat oven to 180'c.

Peel the apple and cut it into cubes, add the frozen berries, put them in a baking tray and top with cinnamon. Mix dry ingrediënts and coconut oil and cover the apple and blueberries.

Bake for about 15-20 min.

Cover pancakes with a little bit of the warm crumble and they are yummy!
