So I haven't done this in a while, but since I have been sick all week I thought this might be a good place to highlight some recipe's. It's almost Valentines day and I thought about posting some recipe idea's for Valentines.
Starting with one of my favorite breakfasts, chocolate-oatmeal cookies & blueberry curd. Mark loves these cookies and now they look so cute!
For the cookies:
- 100 gr instant oats
- 100 gr instant oats chocolate flavor
- 2 medium eggs
- 30 gr coconut oil
- tbsp baking powder
- tbsp raw cacao powder
* optional 1/2 serving chocolate brownie protein powder
- 50 gr almonds
- tbsp cinnamon
- dash of sea salt
- 250 gr low fat curd
- 250 gr Optimel Greek yoghurt cherry flavor
- 100 gr blueberries
- dash of honey (not too much)
Pre-heat oven to 175'c
Start with the cookies. Mix dry ingrediënts and warm the coconut oil so it's oil. Add eggs and coconut oil to the dry mix, add a dash of water (not too much, just enough to form a whole). Unroll the dough and use baking tins to sting hearts out.
Crush almonds, add cinnamon, sea salt and honey and mix well before you topp the cookies with.
Put in oven for about15 min.
Mix the curd, yoghurt and blueberries in blender untill smooth.
